Q: WHY IS THE SHIPPING SO EXPENSIVE?
A: The truth is we are not a large enough organization to receive discounts on shipping. The good news is that we offer a flat rate of just $7.00 weather you order one bag or ten bags. So go big, that’s where the savings are.
Q: DO YOU EVER MAKE GLUTEN FREE PASTA?
A: Yes, occasionally we do. We have teamed up with Elegant Elephant (a gluten free bakery) and we make pasta using there flour mix and they sell it for us. We do not currently sell it on-line but hope to in the future.
Q: IS YOUR PASTA CERTIFIED ORGANIC?
A: No, at least not yet. We do use all organic flours from farmers we trust. We hope to become certified organic in the future.
Q: IS YOUR PASTA VEGAN?
A: Yes! we use just two ingredients flour & water. Our flours are of the highest quality, never enriched, never bleached, all natural and GMO free since the beginning!
Q: HOW LONG IS DRIED PASTA GOOD FOR?
A: Dried pasta will last for one year if it is kept in the cupboard. But really, who can let it sit for that long with out eating it.
Q: DOES EACH LOCATION CARRY EVERY SINGLE ONE OF YOUR PRODUCTS?
A: Our retailers carry a wide variety of our products some fresh, some dried, but do not carry every single one of our products. If you would like to know about a specific location please contact us.
Q: HOW DO I COOK THE PASTA?
A: Bring a large pot of water to a rolling boil over high heat with salt. Use 4-5 quarts of water for every pound of pasta.
Fresh and dried pasta’s cook at different rates. Once you add the pasta to the water immediately start the timer and turn down the heat slightly.
These times are only estimates, test the pasta for proper toothsome.
- Fresh Fusilli & Mia Cugina 1.5-2 minutes. Fresh Radiatore 2-3 minutes. Fresh Lumache 3-4 minutes
- Dried Mia Cugina & Fusilli 6-8 minutes
- Dried Radiatore 7-8 minutes
- Dried Lumache 11-13 minutes
Test for doneness and drain, do not rinse. Unless using for pasta salad. Let the pasta rest and release any excess water for 30-45 seconds. Add to your favorite sauce and buon appetito!
